They are all electric now. There are two types, hot wire and hot film. The principles are the same. A surface is heated and flowing air cools it. There are a few possibilitie in how it is done. One is constant current. The air flow then determines the amount of cooling. The temperature changes the resistance and the voltage then changes with air flow. The relationship in not linear. Either the ECU or the meter makes the re-linearization. The air temperature also needs to come into the equation to determine air mass. With a turbo, the air will get heated by the turbo compressor. So the intake air temp needs to be read near the throttle body. So the ECU then has to make the final air mass flow rate calculation with the temperature and air mass meter signals.
So those are the basics, but the particulars any given system could vary substantially.
Some air mass meters are fragile, they can fail from heat or shock. You definately don't want to be poking around inside. It is probably protected by screeens as well, which are principally there to smooth the air flow.
