I would use Koni shocks, as they are adjustable, high quality and also have a lifetime warranty. Set on soft with the stock springs, the ride is smoother than normal and the handling is very noticably improved. Tightening them up a bit, handling improves even more, at the expense of ride quality.
Springs; I would recommend the Eibachs as they preserve alot of comfort, handle very well and drop the car just the right amount to make it look really cool.

As for the wheels (17*8" I know)...
First of all, if you use 215/45/17 you will have no rubbing whichever springs you go with but you will have to be careful while parking since the edge of the rim will be quite prone to scraping the curb.
With the Eibachs 225/45/17 will fit without rubbing if the offset is ET42 or more (BTW I don't know what the ET stands for). Mine have ET38 and with 5 people slightly scrape over huge bumps in the road -A higher offset tucks the rims further under the fender.
-----As a sidenote, wheels can be machined to increase the offset. This is not a complicated process.
Also, the offset should be written somewhere on the wheel------
I don't know if 225/45/17 can be used with other aftermarket springs without touching. FWIW Abbott springs seem lower than the Eibachs.
235/40/17 should be OK regardless of springs or offset, but the profile is quite low.
245/40/17 can be used only in the front, and I don't think it's a good idea to have different tire sizes front/rear
