Tom,
I too, have it bad for my MP3 player, only I have the JVC model. First, you should check out the stereo page posted here on Saabnet. The link is below. To help answer your individual questions...
The mounting issues with replacing your stock deck are the wiring harness and the dash mounting. You can go to your local stereo shop and buy a wiring harness for any 1987- up VW and it will plug right in with the exception of the remote turn on wire. All you have to do is take that wire out of the VW harness and move it to the proper pin to match where it is in your Saab. The pin-outs of your Saab deck are listed right on the unit itself, so that takes the guess work out of it.
The new deck will not mess up your display in the Saab, it just won't use it. It will still function with everything else that the car uses it for.
The stereo controls in the steering wheel will not control your new deck.
The night mode button will not dim the aftermarket stereo.
