A quick summary, as you saw the procedure that included replacing the calipers...
To install new rotors, remove the #30 torx screws from the rotor hub face. Apply the parking brake if is tough. If the #30 driver tool that came with the vehicle will not do the job, don't force it. Get a 1/4" drive torx bit, as it will be more likely to work and not strip things. Then release the parking brake. Do this first before you do anything else!
The #30 bit can be a socket type or simply a bit to fit into the hex end of a 1/4" hex socket, which is quite inexpensive.
Remove the pins, pads, springs and shims etc.
Degrease the new rotors.
Remove the two 3/4" bolts and lift the caliper up and away. You will need to release the steel line from its plastic clip on the axle. Find some way to hang the caliper as to not distort the steel brake line.
You can now remove the rotor and put on the new one. It will not come off if the parking brake is set.
Take some time to inspect the parking brake bits. All of the sliding and pivot points should be lubricated with some grease designed to be a brake lub. There are parts of the shoe backing plates which rub/slide on the overall backing plate. Lub this as well.
If your parking brake had been previous lubricated, then you could hold the caliper in one hand and remove and replace the rotor with the other, then put the caliper in place and secure with a bolt. It is more interesting when you can do it with your eyes closed... :)
