You should know a measure of this by how bad your mpg's had become and how long you had been running in that state. It is hard to believe that the sensors would not have picked this up early.
After some failures, the battery needs to be disconnected to get the system out of limp home mode. With newer ECU's a TechII reset might be sufficient.
Get a large bottle of Techron Concentrate from an auto parts outlet and that will remove some of the combustion chamber deposits.
If you are running synthetic oil, there is little concern for ring fouling.
I don't see any concern for engine durability. Yes there would be some carbon and soot, if your diagnosis is accurate. But look at what diesel engines put up with and how long they last.
Note that fitting the wrong plugs can result in plug fouling, misfiring and perhaps DI failure.
If it was my vehicle and was out of warranty, I would have run the engine with Techron and let a highway trip burn the carbon out of the cat. The second O2 sensor was probably sensing the burnoff of carbon in the cat. After a while there would be a different steady state end condition, and then a lingering sensor/engine light situation could then be evaluated.
