I have a '98 900 SE Convertible, and ran into the same issue with the headrest. After looking at the height of several models of child seats, I determined that the best course of action was to remove the headrest rather than to try to find a seat that would fit under the headrest. As you mentioned, having the seat fit flush with the car's seatback is very important. It is probably better to have the dealer remove the headrest for you as it is fairly tricky. My dealer did it gratis (Jim Ellis Saab in Atlanta).

I have a Century model childseat that does not have the LATCH system, but does have a tether strap. One good feature of the Saabs is the seatbelts have a "child" position that eliminates the need for clips - the owners manual tells about it if you are not already familiar with the feature. Good luck - my 2 1/2 year old loves to ride in the "convertible car".
