2 things:
1) I don't know if "+1" by itself will be noticeable, but it's not the only thing which will affect quickness. You also have to consider the increase in tire weight. When I went from 185/65-15 to 195/60-15 on my '90 900, I gained 2lbs PER TIRE (even though the tires are slightly smaller). For off-the-line quickness, this is weight exactly where you don't want it: at the outermost edge of rotation. Wider tires will put more of this out there, & I'd guess the combination would be noticeable.
2) Last summer I hit a pothole on the freeway. There was a light rain, so I couldn't tell the hole was there & I hit it dead-on with my 205/50-16s. I had the tire pressure up above Saab's "Lowest recommended tire pressure" (this is the only manufacturer I've seen who does it this way), & I had no damage to the tire, wheel or suspension. So, I'm not convinced the taller sidewall is necessary for wheel protection.
