I just had new tires mounted yesterday. I was facing the same decision.
Car: 1999 9-3 se HOT with SAS bar
Old tires: Fulda Z rated 205 50 zr16 in front
Toyo v rated 205/50vr16 in back
(I bought it this way a month ago)
New tires: bridgestone potenza RE950 205/55HR16
Impressions (after 1 day of driving)
Roadnoise: went from moderate to almost non-existant
Grip: I haven't noticed a difference. I didn't push the car to it's limits, but under aggressive driving the tires didn't lose traction
Ride: The last tires rode "firm" bordering on "hard" with a very solid feel. The new tires are a bit more supple. Small road imperfections are noticed less. However, the car doesn't have quite as sporting a feel in the corners. It still grips well, but just isn't as "solid". I believe the extra side wall tends it give a bit more.
Now the strange part:
With the old tires WOT acceleration in second gear was not possible as the tires would spin. At 3/4 throttle I had ABBUNDANT torque steer (front end would pull left and right).
With the new tires I can't break traction in second. The car accelerates straight with NO evidence of torque steer. It does, however, seem to have lost a little of it's oomph. I wonder if the 1/2 inch larger radius of the tire reduced the torque that much, of if the smoother ride and more grip just makes it feel more controled and less powerfull?
