Engaging the clutch at 3000 rpm will give you a fast start, but if you do that much your clutch won't last too long.
You will find with practice you will be able to quickly engage the clutch at lower rpms and accelerate quickly afterwards. While you won't get the jump off the line like the 3000 RPM technique, your clutch will last significantly longer.
Try engaging the clutch at 1500 RPM, but with enough throttle that it won't drop below 1500 when you engage quickly (don't pop or drop the clutch, but release smoothly and quickly).
