a heck of a lot more work.
2” = 12.566370614359172
2-1/2” = 19.634954084936208
3” = 28.274333882308138
So the 3" is 2.25 times larger then the 2". While the 2-1/2" is only 1.5 times larger (still nothing to sneeze at).
The 3" is 1.4 times larger then then 2-1/2" pipe.
IMHO the 2-1/2" pipe makes a good upgrade, not at good as the 3" but a lot better then the stock intake size nonetheless.
