There is a little fan inside the interior temp sensor that continues to run for a couple of minutes after the car has been turned off. Why? Because if you've ever noticed, when you get back in the car within a few minutes the climate control system maintains the same settings and temperature that it had when you stopped. Basically, the system is "up and running" for that period of time waiting to start cooling or heating immediately.
The noise comes from the fact that the fan gets noisy due to the fact that it sucks in dust, dog hair and you name it that gums up the works. You simply need to blow out the crap and apply some light machine oil to the spinning fan shaft. The sensor can simply be pulled out of the dash (pry around the edges with a dull knife) and then disconnect it. Clean out the gunk and apply some oil (3-in-one oil, white lithium grease, or whatever you have). Resist the urge to just spray a bunch of WD-40 in there since that will coat everything with oil (including the temp sensor itself!) and that just attracts more dirt.
It's a very simple job that will make the fan quiet for many thousands of miles!
