I have four large dogs, though no convertible. However two (Rottweilers = large) are allowed in the back of my car - I have a full car seat protector and a towel set over the center console so they don't leave paw prints there. They are not allowed on the front seats and the Wrath of Dog comes down on their heads if they even consider it.
However, I started out considering a convertible - I think a car seatbelt would be very important from a safety standpoint, for your dog. There's plenty on the market, besides the Saab one.
Can you just put something - aluminum foil perhaps? over the console while you drive, so the dog won't stand on it?
Or, train him not to. I find a 2x4 and a cattle prod comes in handy.**
