Well, Alignment is simply speaking aliging the toe-in of the tires correctly. There is also camber and to a degree castor angle adjustments which play into an alignment.
Generally when you go to a shop they'll set the Toe-in and Camber to stock settings, which doesn't mean they're truely straight, since many cars have a small amount of toe-in which helps with control and some have a great deal of camber (just look at a BMW M3 from the back and you'll see a good deal of negative camber) which helps with cornering. So if it's true that Saabs only allow Toe-in adjustment that's perfectly fine, it's probably the most important for car control. Just make sure you get a place that does 4 wheel adjustments. If you plan on driving at high speeds a lot, there are some places which do rotating tire alignments, but I don't know anyone who's actually done it.
