The fluid moves down to the calipers as the brake pads wear down. If you top up the reservoir, then you simply have to be careful when you put in new pads. As you push the pistons in to make room for the new pads the reservoir might overflow. Or you could open the bleed valve as you push in the pistons. Better yet, it's a good excuse to flush the brake fluid...
