Usually when the thermostat stops working, it fails open. So, in cold weather the engine temp drops on the hwy, because there is plenty of air cooling the radiator.
If the thermostat has not been replaced yet, just maybe it is failing partly closed, which would explain the overheating.
Hard to say what to do first. If I were flushing and refilling the cooling system myself, a new thermostat is only about $15, so I would put one in at the same time. If someone were charging me $100+ to replace it, I would do it one thing at a time.
You could also have the oil pressure tested, just in case there is not enough oilflow in the engine. Does the oil pressure indicator light come up on the instrument panel when ignition is first turned on?
