You are afraid of stalling so you are over compensating. A slushy clutch slipping start is not the objective. Learn to start without reving up the engine. Practice in a area with no traffic pressures to worry about.
I enguage at low RPMs and the RPMs get low and you can feel the engine bucking in the mounts. Thats what they are there for. So also get rid of your adversion to the engine 'shaking'. Once you get the hang of the shifts into first, you can finess the trade offs. Having someone with good techniques drive with you oberving how things feel and sound would be good. Just remember that you want to minimise the relative speeds of the engine VS gearbox to reduce clutch wear. And you want to get the clutch engaged quickly. If you have too much gas and getting off the cluch quickly does not feel right, then you may end up 'slipping' the clutch to compensate while the real problem is your right foot on the throttle. So make the clutch engagements a short duration event. So reduce relative speed differences between the engine and trany and keep the duration of the engagements short. This will minimize wear.
