iac = idle air control. since you pulled the plugs, the iac is that motor that is found under the intake. it is held by a rubber bracket. if that bracket gets soft, it could leak, hence, erratic idle. there is also a hose from one end of the idle motor to the throttle body, i think?
"and I have recently shot some carb cleaner down the air intake" - so you cleaned the throttle body, got the varnish out? the v6 has two throttle plates - an electronic throttle, related to TCS, and the manual or cable actuated. well, might as well clean it.
to check the amperage - pull the LH rear passenger seat. you'll see a cut on the carpet. lift up, twist plastic cover . . .
if these do not work and you are still getting the car will not start deal, then the problem may be with the crankshaft position sensor. Do a BB search for that word, see link as a sample . . . good luck!
