You can indeed turn the AC back on with the top down in a NG900/OG9-3 or a 9-3SS Vert. I call it "the most decadent thing in the world", top down and AC blowing like mad, actually quite useful for stylish cruisin' when it's hot. Normally lowering the top does bring on the AC OFF icon (or with a NG900/OG9-3 the ECON icon) but press the AC button, or on a NG900/OG9-3 the ECON button and you can turn it back on.
As for Steven Cohen's 9-3 Arc Vert, Steve, are you sure you don't have the rear defrost mixed up with the front defrost? The front defrost is the icon that's arced, no pun intended, or fan shaped in the upper right whereas the rear defrost is the square/rectuangular one in the lower right. The rear defrost is indeed blocked with the top down, but the front defrost works top up or down and I'm sure manually switching back on the AC, top down, will improve the demisting qualities.
