You may be seeing stuff which cycles or arms itself when you first install the battery. The small voltage supplied by your ohm-meter isn't enough to boot the alarm or the interior light delay timer or ???

Here's a better way...
Install a battery, leaving one cable 'loose'. Set your meter to measure current. While you're touching that cable to it's battery post, hold the meter leads on the post & the clamp.
After a minute or 2, pull the battery cable away from the battery post, but hold the meter leads onto the post & cable. This way the meter completes the circuit, but you haven't disconnected the car, even for a moment.

For the first minute or so your car draws enough current to maybe(?) blow a fuse in your meter. So this way you put the amp-meter into the circuit without restarting everything.

So... what's acceptable current when everything is SUPPOSED to be turned off? I suppose a couple milli-amps for the ECU & clock's memory?

Now 12.5v/2k-ohms is only about 6 milli-amps. So if your meter isn't very accurate with high resistance, that might be almost OK. With a 60-amp-hour battery that's 1000 hours to draw 10% of the battery's charge.
