Speed ratings are but one aspect of tire performance. Higher speed rated tires will typically have better wet and dry traction. This means that a lesser tire will not stop the vehicle as fast dry or in the wet. Cornering and accident avoidance performance are also affected.
Tires control stopping distances on almost every modern vehicle, not the brake pads or rotors. You might not drive fast, but you have a need to brake aggressively in an emergency.
All season and other tires with very high wear ratings can last a long time. Long enough that with the heat of summer driving, the rubber age/heat hardens and traction wet or dry really suffers. In a cold rain, these can be very dangerous. In these cases, even with lots of remaining tread, those tires should be scrapped. So the economics of some tires can be marginal. And the economics also have to value the increased stopping and accident avoidance valve of the more expensive performance tires.
And if your high wear rated tires have lots of tread left when you get into an accident because of bad stopping performance, and the vehicle gets totalled... the tire value is?
If your vehicle has traction control, with lesser tires, you acceleration will be decreased to match the tire patch traction. You Saab might be slower.
