The brakes, coolant and O2 sensor clearly needed to be done. But they may have been doing "Preventative" work on the rest of the stuff. The problem is in cleaning the IAC valve and the throttle body, if they did it quickly they probably contributed to the clogging of the purge valve.
It appears that they are not only charging you a lot, but they may be incompetent. Explain to the Manager, that your car came in running fine for some simple routine work. Now after spending a lot of money it is running worse. Clearly something they have done is the culprit. Ask the manager to make this situation right,and if they don't, you can start by calling Saab Customer service to report them and the situation.
