Here in SoCal I would tell you to look at KBB.com, trade-in value in fair condition, even if (and only if) you car is in good to excellent condition, and use that value as a starting point. For a 2000 9-3SE stick with 112k, that comes in at $4,200 for KBB.com
For Edmunds they'll give you a value before you enter the equipment and the miles, which can be deceiving. Before miles and equipment it's $5,700 ish, after miles and equipment it's $3,500 ish, about what I would expect. I used the SLC zip code and got about $150 less.
Me I'm an actual used car appraiser/buyer here at the dealership. I'd book the car out in the actual Kelley Blue Book with actual wholesale values, info not avialible to the general public, but only to licensed auto dealers and lenders and I'd come up with a "book" of $7,150 after a $1,650 "hit" for miles ($8,800-1,650=$7,150) and my standard bid would be around "3 grand back" or $7,150 - $3,000 = $4,150, but I would be extra cautious on a car with 112k, maybe "4 grand back" or $3,150. A non Saab dealer might be a little more cautious still.
The local Saab dealer might know someone interested. Likely they don't have any thing to compete as a new car dealer wouldn't do business in such an older higher mileage car and so they, the salesfolks, might be willing to hook you up with a prospective buyer in that price range. I'd try Roy Womboldt at the local SLC Saab dealer, Ken Garth, he might be helpful, and know which used car dealers might be interested.
And of course go ask the truck or SUV dealer. Their reaction to your request for the value of your trade in will be a good guage of how they'll treat you. As a salesmanager I don't mind evaluating a vehicle for trade even when the customer hasn't necessarily selected a new vehicle they're interested in. If they wanna' play games or want a commitment to buy from you first then maybe they're a little too "old world" and you need to find a more enlightened dealer.
And finally, do check out a 9-7X. The Saab dealer will likely be more user friendly on your trade and Saab has got massive incentives making the 9-7X very, very attrractively priced.
