... to have an alignment shop do this ? Not only do you get higher accurancy, but you get to check caster for issues as well as the rear alignment. Seems like money well invested. I go to NTB usually as they give me printouts of before and after specs so I can make some of my own decisions on whether something is an issue or if there are changes in the vehicle. Pretty cheap insurance and diagnosis.
To throw some light on your question - the surfaces of the rims are likely parralel, but not necessarily both sitting in the same relationship to the ground plane - i.e. it's possible a wheel could be sitting at an angle and not perpendicular to the ground. Look for any bends in your wheels before measuring anything.
