The sludge formation is a chemical process. Oxidation is part of that process. Wear metals that accumulate act as catalysts. There is a product that one can add to paint or varnish that acts like this, often called "Japan Dryer", that has metal compounds in it.
Neglect and depletion of addatives in the oil would be part of this. If the oil is changed often enough, such problems will not occur. It it interesting that we were getting more sludging on the 2.3 NA engine than the 2.0 turbo. My thinking is that the turbo owners are a bit more concerned about their engines and more technically aware.
New oil does not breakdown and sludge, old oil can.
