The guage should be at 9 o'clock. If lower, which would happen more at speed, the thermostat is sticking open and needs to be replaced.
When the engine cools and the coolant contracts, a low pressure will be developed.
If the reservoir is stained, you may have to open and look through that to eval the level.
A/C does not care about the engine been at temp or cooler. I think that the A/C would be cut if the ECU saw temps out of control.
