Living in Canada where snow and salt are all the rage for 6 months, an engine bay can get really out of hand. The old '86 SPG I owned didn't seem to be as bad as the 9.3s for sucking up salt spray amd road grime (it took me quite some time to find a Viggen that looked good under the hood). Not sure why that is or how that can be changed.
Anyways, short of removing loose rust and repainting the engine block and bits, the only way to stabilize things is oil spray. I've found that automatic transimission fluid in a pump spray bottle works very well and generally doesn't burn off.
On the top of the engine (intake, head, etc.) where the spary is minimized I use WD40 and apply it more often. It doesn't trap dirt as much and seems to work.
On my Viggen where some of the plated metal work has begun to oxidize (chalky white), I've applied used synthetic motor oil and it's turned the metal black. Not sure how well it will stand up to salt/winter though.
