The A/C does not care about the engine temp, but I think that the ECU will detect engine over-temps and that prevents A/C compressor from running. You might have a bad ETS and the system may default a lack of sensor signal to this same action.
Sometimes when trouble shooting an ETS fault with meters etc, the problem cannot be found and is gone when the connector is put back on. So you can try removing the connector, inspecting for damage or contamination, then reseat and see what happens after that. The connector is conveniently back and below the TB feed pipe for easy access.....NOT. A 200-300 ohm resistor can be placed across the connector and should produce a temp indication. A cold ETS will be 1000-2000 ohms and will be a few hundred when hot. Yours may have an internal break that makes contact when warmed up. Changing the sensor will spill coolant unless you drain some first.
