Hard to know without hearing it firsthand. A couple things come to mind...
Sticky ignition switch, so the starter circuit is still making contact for some small time after you release the key. Try actually turning the key back to 'RUN' instead of just letting it spring back by itself.
The starter's solenoid has 2 jobs. It extends the starter pinion gear out so it engages the flywheel. It also switches electric power to run the starter motor. Either one (or both?) of those may be hanging up if the starter solenoid is gummed up with lack of lubrication. You may have to dismantle it to figure out.
