It all depends on if the customer wants me to have my blinds on or not when doing the job. ;o)
It doesn't exist any "set" labor times for an engine swap (especially used). It all depends on each case if long or short block, transfer of some or all parts, turbo/non turbo, auto/stick.
If the customer don't want to know anything about the supposedly good used engine but only want the engine thrown in without checking this and that, it could probably be done in 8 hours.
I wouldn't do it like that though.
When I get the used engine I strip it down to the bare block taking intake and exhaust manifolds off together with all other aux devices if it comes with any. Clean all surfaces, remove valve cover and oil pan on the sludge prone engines and replace gaskets and o-rings together with running the pan and valve cover in my parts washer. Replacing exhaust manifold studs as well and resealing oil pump and rear main seal.
Then you have to strip down the old engine and move all parts over and check motor mounts, pulleys, water pump and all things like that to see if it's worth to install or should be replaced.
The reason why I use all devices from the old engine is that sometimes, it is small differences between years as far as vacuum ports or emission devices and if you just throw the donor engine in without checking with all manifolds attached, you can bet that it is some small things changed that will kick your butt at the end.
So when all this is done, you are looking at about 12-13 hours when the car is up and running again.
