I just made this very change recently as well. I went with the Bridgestone RE960AS pole positions from the Tire Rack, in the 205/55/16 size. I had Michelin Pilot Primacy's in the 205/50/16 size previously, and I don't notice a handling loss at all.
The aspect ratio is a percentage of the tire width - so the 50 series tire (in the 205 width) will have a sidewall height of 102.5mm, and the 55 series tire will have a sidewall height of 112.75mm - that 10 mm actually fills the wheel well a bit better and has better resistance to wheel bending impacts. I'm in the city of Chicago, so I wanted better wheel protection.
Saab actually supplied the 55 series tire as standard for the later model 9-3's (same rim size), as they were apparently getting lots of complaints about wheels bending.
