2000 9-3 HOT Strange Idle Behaviors

This morning, my baby started developing strange behaviors that are only noticeable at idle:
The idle seems to take a looong time to get back to about 1000rpm - if it does. Most often it remains around 1200rpm; sometimes as high as 1500rpm.
If I step-off the gas while driving, the car keeps going at around 25mph or so.
But when I'm stopped at the light, the idle settles a bit over time, and then I feel intermittent drops in firing the cylinders. In those short moments, the idle seems to drop below 800rpm, until the stabilizer catches it.
It never stalled out, and it always starts without delay. However, it has been guzzling gas (21mpg) since I got it, and my mechanic could not find anything wrong when he hooked it up to the computer and tested emissions a few months ago. I still have not gotten around to clean the MAF and throttle body.
We recently replaced the spark plugs with the copper type. The car now has little over 53k miles on the odometer.
Any ideas what's happening here? Is this a sign for something bigger to come, that will leave me stranded?
