Head Gasket R&R

I believe the time has come to replace the head gasket in my 2001 Viggen. I've been quoted 1k from a local indy that specializes in German cars and Saab. I dont know how much they specialize in Saab, but its the only option where I live. Aside from the fact that I dont know their work, doing it myself would give me an opportunity to examine other items. Ive quite bit of experience, and am no stranger to rebuilding a motor, but most of it is older with push-rod motors.
If I do it myself, which I am contemplating, ill need to get any necessary parts in advance. Aside from the head gasket kit and head bolts, is there any things else I should look at replacing while I am there?
Is it possible to simply unbolt the exhaust, and any associated brackets, from the head to facilitate removal, or does the exhaust manifold need to be disconnected from from the exhaust or turbo?
My other concern is the cam chain, how does one disconnect the cams from the chains? Is there enough slack in the tensioners to simply slip the chain off?
