No, it's not possible for the engine to shut down several times due to chain wear. It might shut down ones, but that's it when it bends the valves.
It is probably something else going on.
You are asking if it is possible to R&R timing cover without jeopardizing and creating a leak at cylinder head. That's not possible to answer because each job is its own scenario.
I myself wouldn't do it since too much is at stake and the head gasket might be close to ready to fail anyway.
It is possible to get the timing cover off but you need to push the engine over toward left side to make room.
I would at least in your case remove the oil pan so that you can slide the timing cover up against the cylinder head gasket with lots of good silicone sealer between.
