I'm not in NC but CDN but my cars have always lived outside so can share a bit of my experience.
I've tried car covers on two of my cars without success. No matter how good a cover you have, if the car isn't clean, you're going to scratch the paint. I just am not disciplined enough to wash the car after use and letting it dry completely before covering it. I gave up with that.
Nothing bugged me more than when my cars were good looking on the outside but the interior was destroyed by the sun (and I'm sure the sun is MUCH stronger where you are). I've had great success in using those silvery window covers that you place inside the car. I sue different ones or the rear hatch, side windows and windshield and on extremely hot days I use theme wherever I go. So far the interior's holding up very well. Of course regular vinyl and leather treatment helps too.
