To start, you're gonna need to vacuum out the whole system. Of course you will need a vacuum pump to do that. Next, you're gonna need a set of manifold gauges that can read high and low pressure. Those cheap plastic gauges are useless because they only read the low pressure side. Good news is some auto parts stores like Autozone or Checker (whatever they are calling themselves now) rent them for free.
In addition to the freon, you will want to add some oil if the system has been sitting and not in use. The best thing to do would be to remove the compressor, drain it, and add new oil.
Finally, the only RIGHT way to evac freon from the system is with a very expensive machine. You will need to have it done somewhere. However, if you were to crack one of the hoses and vent the gas that way, you wouldn't be the first. I would wear some heavy gloves and eye protection if you go this route.
