Hi, the way I did it is with a syringe (60ml or more, can't remember) and some small tubing (I don't remember the inner diameter) with a diameter that fits on the bleeder valve. I heated it up a bit with boiling water and then forced it well on the tip of the syringe so that it would stay put.
Then, I filled it with brake fluid and made sure all of the air was gone. I put some paper towels underneath the clutch bleeder valve, put the tube close to it, pushed some fluid out to expel any air near the end of it while at the same time pushing it onto the valve. Oh, BEFORE doing that I put a 9mm 12 point wrench on the valve. Once the tube was well in there, I loosed the valve a bit (not much is needed really...) and slowly pushed fluid up (yes, it's all done in reverse) the valve until all of the old fluid went inside the top reservoir.
As for the pedal, I held it up with a piece of string attached to the seat. I'm not sure if this is the right way to do it, but it worked perfectly for me. I didn't want the pedal to move.
Make sure to be really careful not to get air in there, otherwise you may introduce problems with the slave cylinder and air having gone into it, which requires a lot of labour to fix.
