Hi Gianni,

The ding sound and engine shut-off is a safety feature since there's a danger you'll forget the car is in gear and hit the gas pedal. This isn't a problem with the auto since you start moving forward slowly as soon as you take your foot from the brake pedal and on a normal manual you'd have to physically release the clutch.

I therefore recommend you either take it out of gear when stationary or keep your foot on the brake pedal. I wouldn't go trying to disable things which are there for a safety reason.
