According to their marketing materials, Saab has been investigating accidents occuring in Sweden for many years to gain insight as to ways to further improve the safety of their vehicles. I would e-mail them your specific question to see if they have any data on the safety of convertibles generally, and with child seats specifically. It probably goes without saying that the children should be in the back seat due to the airbags.
For what it is worth, the child seat in my convertible only comes up to the level that is even with the trunk lid, so even if the car flipped and the windshield was flattened completely (unlikely case), I do not believe that the top of the child seat would touch the ground.
All that said, you will never win an argument with in-laws regarding the safety of their grandchild!
