Have you been using Techron Concentrate. It does reduce combusion chamber deposits.
Are you doing power mods? If so you could do some port and polish of the head. At least you could do port matching on the intake side. And please report how well both sides conform to the gasket profile as stock.
The head is checked for warpage with a straight edge and feeler guages, but you would need a straight edge that was true.
The loose stuff on the pistons can be scraped off. Have a shop vax handy. Don't scratch the pistons. Use a plastic or wooden piece first and see if that works. You don't need the pistons clean. Consider the thin tight deposits to be a poor mans ceramic coating.
If you can get the head's combustion chambers clean, you can polish the chamber as this reduces the ability of deposits to form and adhere. But you need to make sure that you don't get abrasives were you cannot clean things up. Much depends on if you are removing the valves etc. Perhaps you will want to redo the valve seats etc. But that requires an inspection, and that requires that the valves be removed to do the inspection. So it depends on how much work you want to get into or pay for.
Did you do a compression test prior to tearing things down? That is a good idea to help evaluate the condition of the valves.
When removing te gasket residue be very carfull to not damage the head, sepecially near the piston seal ring areas.
A note for others, removal of the head is not required for chain case work.
