A turbo model (SE)is much more fun, and being a used car, they are not much more expensive. Drive one, you won't want the S model. Stay away from the V6.
If you can afford it look for at least a 1998 model. The 1994-1997 models have this miserable mechanical clutch, as well as some other early production issues. I have a 94 900 SE (turbo), and I find I am still fixing factory shortcomings in design/materials in 2002. Nevertheless, I still like the car, a 1998 is just better.
Whatever you do (true for any car) get a mechanic familiar with Saabs to take a look before you buy. Transmission, linkage, front suspension, idler pulleys, A/C, compression, oil leaks, balance shaft/timing chain, washer pump, water pump, etc. were all weak points on early S models.
