I experienced the same problem with the AC compressor never turning on. It can be one of several things:
1) Blown fuse or bad relay (check those in the engine compartment fuse box)
2) The AC high pressure charge sensor next to the receiver/drier (behind the grille) could be detecting a low freon charge
3) The thermo sensor (part # 46 34 895 for around $50) on the compressor is defective... This was my problem
4) The compressor has given up the ghost...
The easiest way to test the compressor is to jumper straight from the battery to the wire coming out of the thermo sensor that is leading to the clutch on the compressor. I forget what color that wire is (and it's too dark to go look at the car now). Follow the wires back from the compressor and jumper straight from the battery (bypassing the fuses, relays, and pressure sensors) until you eliminate the fault.
If the compressor works when you jumper after the thermo sensor but DOESN'T work when you jumper just before the thermo sensor, then you've found the problem! And yes, the sensor can be easily replaced since it doesn't go all the way through the compressor (it won't depressurize the system when you remove it). On turbo models there is less room to work around the compressor so you might have to drain the coolant and remove the lower radiator hose to get to the thermo sensor.
