The difference between the 16-18 inch range of wheels/tires is a matter of diminishing returns. You can end up spending a lot more money for very small increments in performance improvement.
There was an article in Road & Track a few years back and they tested the same tires in different wheel sizes according to the plus concept (1,2, etc.). The real world differences could be described as minimal at best. Taking into account also the fact that they test in ideal road conditions you run into another issue - the real world of potholes, bumps, sewer grates, etc.
So it's a tradeoff really. Are you REALLY going to be using any of the added (minimal) performance gains of a larger wheel/tire combo? Are you going to be more careful with your 18" wheels (because you'll have to be).
As far as improved looks go, 17"s are a good compromise between the really large look of an 18" and the standard look of a 16".
I am personally going to stick to my 16"s and keep the pressure up at 40 psi. I'll get my 17"s or 18"s when my new car actually comes with them stock (next generation 9-3 coupe hopefully).
