Yes, you can aways repair a damaged wire if done properly.
The O2 sensor in the exhaust system or the knock senor bolted to the block?
The O2 sensor will have high temp insulation that is difficult to strip, and the wires may be nickel plated and could need some sanding to allow solder to bond to it.
You replacement insualtion needs to be appropriate to the temperature demands under the hood. Heat shrink tubing is always good. Heat shrink onto RTV silcone before the silone cures is very good.
