Different manufacturers have different bed-in procedures for their pads. Each one tries to achieve something different. They vary due to difference in pad materials and construction.
Some manufacturers have no bed-in procedure at all. They pre-bake their pads at the factory and such pads do not require any additional bedding-in other than being gentle the first few days. An example of these are Pagid pads.
I usually use the following bed-in procedure. This one is recommended by PBR:
-- accelerate to at least 40 mph
-- brake with medium force to slow down to about 5 mph but don't actually stop, if possible
-- continue driving slowly for a few minutes, trying to avoid using brakes if at all possible (at this point I slow down using engine braking and a little hand brake)
-- repeat 10-15 times
A few points. I try not to use the hand brake if at all possible. It is not supposed to be used to stop the car other than in an emergency, so this should be kept to the very minimum. In 99% of cases engine braking is enough to allow a few minutes of slow driving even if there are traffic lights, stop signs, etc. I think that this procedure is gentle enough as to not to overheat the brakes, yet they do heat up enough to burn of any of the "resins" that are cured in during manufacturing. The medium effort braking is also good for mating the pad surface to the brake disks.
Brakes will usually stink during and after this procedure. The burning smell is normal and an indication that the procedure is working.
