If the old plugs were causing some misfiring (missing), then this would carbon things up. If the old sensor was not working right, then the ECU was not albe to control the mixtures and this could carbon things up. Go by the appearance of your plugs. What did they look like? Wrong type as well or just the gaps were wrong?
A series of cold starts will make things black! -such as staring and moving the vehicle and not getting a run. Cold starts are rich and the O2 sensors do not 'light off' until getting over 800F. The electrical heaters in the sensors speed that up.
