check engine light from dropping engine temp

1995 9002 2.3L 4cyl. 89-oct.
My check engine light has come on intermittently for a few weeks. It only occurs when it is cold now, although it used to come on when I hit bumos because my throttle body cover would come loose--I've since fixed that. But now, i notice that when I am driving the car, especially downhill (because the engine is not doing much work I presume) in very cold temperatures (34°C and below) the engine temperature drops and when it gets fairly close to the "cold" marker, the check engine light then turns on. I consistently run plus grade gas in the car and the cooling system all checks out, although I wonder about the thermostat. My coolant is 50/50. I also used some fuel water remover about two months ago, but I may need it again since my tank level has been cold often in cold water.
Any ideas out there? should I replace my thermostat? Is that something I can do myself or do I have to take it to the dealer on this car (this is my first NG900... I am used to doing most everything myself on my old 99 and 96).
Thank you for any help, suggestions, or pointers!,
Brendan
