With AC on max, fan on max, hot day, doors open, recirc off, let things run for a while to allow pressures to balance out. The low side pressure should be around 32-33 PSI for good performance. It can go high from an overcharge, but 80 would be insane. If you did not add anything, with a leak pressures can only go down. So as Swedecar suggests, something else other than the charge may be going on.
You cannot check charge with the compressor not running!
You do not need to empty and refill to get good performance. You can check pressures and with the fan low, check evap temperatures as well. There is doing things by the book and there is getting things done with economy and with the tools on hand.
