I would replace the t-stat if its quite old. The first code states that it cannot manage the fuel properly and the next two codes are simply confirming that result.

The temp indicator is controlled by the ECU and it masks some temperature excursions.

Too test that a t-stat does not fully close, cold engine, p-brake on, start engine and feel the upper rad hose. If it gets gradually warmer as the block gets warmer, the t-stat is bad. If the rad hose stays cold until the block and indicator show heat, then the hose goes from cold to hot suddenly as the t-stat opens, then the t-stat is properly closing when cold... but it could still be off spec. So if you detect that it is not closing when cold, you know its bad.

The ETS, engine temp sensor could be bad, it is operational, perhaps off-spec.

So its the t-stat or the sensor. Hard to know which until you investigate.
