Do I need to replace both calipers?

1997 SE 2.0T
My front left brakes were making a horrible metallic grinding sound and it became progressively worse over the week until it wouldn't stop even if I let off the brakes. It felt like the brake was constantly applied. I knew I would have to change the rotors and pads, but then, in the morning, I noticed brake fluid all over the front left wheel, and no brake pressure (and no more driving the car.)
Mechanic says that I need to replace the rotors (fine,) pads (no prob,) and both front calipers. He didn't inspect the car but just said that you have to change calipers in pairs.
My question is, do I really need to change both calipers? The right front side caliper seems perfectly fine, and the sounds weren't coming from that side (and wear is normal on that side.) I'm trying to not spend extra cash! What is the risk of not changing both at the same time?
