I'm not sure what year/model of Saab you're looking at but my '95 900's black paint hasn't held up well, even though I wash it regularly and wax it regularly.. and have since I bought it when it was a year old. The paint is oxidized nearly beyond the help of waxing, and on the hood has many tiny cracks. Sadly, I've got to stand pretty far away for my otherwise sporty 900 coupe to look all that good.
My 2001 9-5 sedan, purchased new, is also black. It's factory paint has held up well. However, when a tree fell on it the roof had body work and was repainted, and the roof's repaint sucks (no fault of Saab's, however).
I'd go for red if you're getting and NG900...
